Healthy and delicious Greek moussaka

The stress is on the last syllable – moussaKA – but there’s no stress at all in making this simple yet charming aubergine-based ground meat dish. It’s amazing that a meal as heart-warming as moussaka is often traditionally served cold, as it’s said that leaving it to chill can improve the taste. But whether you prefer it served cold or hot, it’s the cheese that completes the dish after baking. In this case, it’s parmesan, the king of all cheeses, and which is in fact one of the four lowest calorie cheeses out there. Frequently in classic recipes the aubergine is fried, but it’s simply baked in my healthy version of this wonderful Greek treat.
