Healthy and delicious meatball sub served with bacon and tomato spaghetti




For a juicy meatball packed full of flavour, load up the beef mince with garlic, finely chopped onion, mustard, breadcrumbs and plenty of seasoning. Cook in the oven.

For the bacon and tomato sauce, mix tins of chopped tomatoes with Worcester sauce, add garlic and generous seasoning, and reduce slightly. In a separate pan, fry off the bacon (which has been chopped into small bits) until dark and crispy. Add the tomato sauce to the well-cooked bacon, and bring together into a beautiful, rich, smoky sauce, deglazing the pan of all that lovely bacon flavour.

Toast the sub rolls slightly (if you wish), and place the cooked meatballs onto the subs, along with some of the bacon and tomato sauce.

Boil spaghetti, and add to the rest of the bacon and tomato sauce. Serve the spaghetti alongside the meatball sub.
