Chocolate topped Christmas cake with brandy and hazelnuts




If you’re going to get busy in the kitchen this Christmas and make a real effort, you can’t not make Christmas cake. It’s the ultimate cake at Christmas, with fruit, nuts, marzipan and, most importantly, alcohol! Again, my first time making this dish, and to make it extra special I’ve added a layer of chocolate on the top for an extra dimension of flavour. What better way to finish an afternoon of feasting than with good, old fashioned Christmas cake!?

Three fun facts:
  • In the 1400’s, the British began their love affair with fruitcake when dried fruits from the Mediterranean first arrived.
  • Christmas cake is an English tradition having evolved from plum porridge, which people used to eat on Christmas Eve to line their stomachs after a day of fasting.
  • A particular favourite of many is the traditional Scottish Christmas cake, the Whisky Dundee, made with Scotch whisky.
