One of my all-time favourite breakfasts, and one certainly appropriate
for Christmas! I even prefer this to its supposed posher version, Eggs Royale,
which is with salmon instead of bacon. Although I love salmon, I think a lovely
crispy rasher of bacon is perfect with the hollandaise sauce and poached egg
atop a buttered toasted muffin. I like to keep the bacon on top to keep it crispy. Sprinkle with some cracked black pepper and you’ve
got yourself a breakfast worth getting out of bed for.

- Originates from New York in the States.
- There are many versions of the dish, including an Eggs Chesapeake which replaces the bacon or ham with Maryland blue crab cake.
- April 16th is National Eggs Benedict Day.
